Baking the World a better place since 2022!

Hi! I’m Sara Hancock — founder and pastry chef of Whimsy Fancy. 

For as long as I can remember, baking has been my refuge, my passion, my love language, and my greatest challenge. From standing on a step stool beside my mom in the kitchen, carefully inspecting every piping tip in her Wilton decorating kit, to graduating from the prestigious Culinary Institute of America’s Baking and Pastry program, my love for pastry has always been the thread that ties my life together.

The Dream! 

I’ve dreamed of owning my own pastry business since 2011, when I first stepped into culinary school — driven by a desire to bring joy, connection, and celebration to people through sweets. There’s something truly special about watching someone treat themselves to a fresh breakfast pastry and a specialty coffee; you can tell they’ve been looking forward to that small moment of indulgence all day - sometimes all week. I especially love creating milestone treats like baby shower cookies, birthday cakes, and graduation desserts— the kinds of sweets that become part of life’s happiest memories. Those are the days I feel like I'm truly making a difference, to help bake the world a better place.  I’ve always strived to deliver the best quality bakes, and would never want to overpromise or underdeliver. I also knew success wouldn’t come overnight— every dream needs a good plan— so I set out to gain as much hands-on experience as possible across a wide range of pastry production styles and kitchen environments before building something of my own.


The Street Cred 

I’ve had the privilege of working at fine dining restaurants like Range by Bryan Voltaggio, learned the art of laminated doughs and breakfast pastries at a small three-person bakery, honed high-volume and high-detail techniques as a Pastry Sous Chef at Occasions Caterers, and later supported commissary operations and expansion for Call Your Mother Deli. Each role deepened my knowledge and built my confidence — not only in my craft but in my ability to lead and operate a business.


The Dream come true!

In 2022, I finally felt ready. Whimsy Fancy was born from years of study, hard work with long hours and very early mornings — I now have a fully booked calendar and all due to amazing customers I’ve had the chance to serve and their very generous word of mouth advertising! 

At Whimsy Fancy, I specialize in breakfast pastries, custom cakes, chocolate bonbons, decorated cookies, and all manner of desserts—  all designed to help people mark life’s special moments .  Nothing makes me happier than knowing something I baked became part of someone’s cherished memory.

What’s Next: 

A Whimsy Fancy Cafe to bring that dream to a physical reality!  The goal is to open a cozy, welcoming retail storefront café where people can gather, celebrate, and enjoy life’s sweet moments together. Because to me, pastry isn’t just about flavor — it’s about comfort, connection, and creating little moments of joy.
